The McCarty Metro's new recipe section are favorite dishes submitted by our readers. Here is your chance to share your favorite recipe, or just show off to the rest of the world. Each month has a theme. Send in your recipes (as many as you wish), but stick to the next month's theme. Below, you will find what each month has planned, and a submission form. I would like to get at least one recipe from every reader..

Chicken Enchilada Ring

2 cups cooked cut up chicken
1 cup mayo
1 cup shredded cheddar cheese
1 cup crushed Tostitos chips
1 pkg taco seasoning
2 pkgs crescent rolls
Combine everything except the crescent rolls and save some of the crushed chips. Roll out crescent rolls onto a cookie sheet-- if you are fancy try putting them in a circle with the points of the triangles pointing out. Put the chicken mixture on top, and either (unfancy way - cover with crescent rolls) or fancy way -- fold over points of triangles. Sprinkle chips on top, bake @ 350 for 30 minutes, or until the crescent rolls look done.  Serve with sour cream, salsa, guacamole, extra uncrushed chips.
Chicken Chili

2-3 chicken breasts -- cook and shred
1 large jar Great Northern Beans
1 16 oz. jar salsa
1 12 oz. block Monterey jack cheese -- shred
1-2 teaspoons cumin
Mix and heat in crock pot. Enjoy.
Chicken In Wine Sauce

3 chicken breasts
2 tbsp butter
1/2 tsp salt
3 carrots thinly sliced
pepper
1/4 cup white wine
4 oz can mushroom stems and pieces
10oz can of condensed cream of chicken soup
In skillet, brown chicken breasts in hot butter. Add remaining ingredients and simmer covered 25-35 minutes until chicken and carrots are tender. Serve with rice or noodles.

Kelly's Krispy Sesame Chicken Strips

1 egg
1/4 cup water
1 cup dried bread crumbs
2 tbsp flour
2 tbsp toasted sesame seeds
salt & pepper to taste
cayenne pepper to taste
2 chicken breasts pounded and cut into strips
1/2 cup vegetable oil
Pitas
Shredded lettuce
Sesame/honey sauce
In a small bowl, mix egg and water. In a separate pie tin, combine bread crumbs, flour, sesame seeds, salt, pepper and cayenne. Dip chicken strips first in the egg, then roll in the crumbs coating well. Put in refrigerator for a half an hour. Pour oil in a baking pan and heat in a 375 degree oven. Remove and add chicken, coating them evenly in the oil. Bake for 35 minutes until golden brown and tender. DO NOT OVERCOOK. Take pitas, put in lettuce, add the chicken, and top with your sauce.
"Irish" Chicken Nuggets

1 twelve piece order of Chicken McNuggets
1 packet barbeque sauce (or one of the other tasty dipping selections)
Handful of napkins
Large fries and Large "Diet" Coke
Head to McDonald's fine restaurant. Go to counter and order one of the 12 piece chicken McNuggets. You will want to have a side dish of french fries and a Diet beverage to wash down.  Place Irish nugget in dipping sauce and eat.  Proceed until all gone. Serves one large individual. 
Bucket O Chicken

1 bucket of Extra Crispy Chicken at KFCThe Colonel's Extra Crispy Recipe has the incredible edible breast bones. These puppies are so deep fried that you can eat the cartilage, bones, and extra crispy coating. I believe the chicken disintegrates at these temperatures. Use caution as napkins will stick to your grease soaked finger tips.
